Twice Baked Potatoes with Roma Tomato Salsa
Sioux-Z-Wow's Saucy Nickname is
Sioux Z's Twice Baked Tomato Potatoes
Serves 2-4
1 T. Butter, softened to room temp.
2 med. Baking Potatoes
6 Roma Tomatoes, chopped
2 T. Tomato juice
½ med. Sweet Onion, diced
2 t. Olive Oil
2 T. Sioux Z Wow Marinade
1 t. Oregano
½ C. Parmesan Cheese
Salt and Pepper to taste
To Make:Heat the oven to 350 F.
Wash the potatoes and pat dry with paper towel.
Rub potatoes with butter on all sides and bake for 1 hour.
Mix together the tomatoes, onion, tomato juice olive oil, Sioux Z Wow and oregano. Add salt and pepper to taste. Set aside while potatoes finish baking.
To Assemble:When the potatoes are done, cut them in half lengthwise and crush the 'meat' with a fork.
Top with the tomato mixture generously.
Sprinkle with parmesan cheese and place in the oven at 500 F for 3 min.
To Serve: While piping hot,serve with a green salad and your favorite cold beverage.
