Black Bean & Tomatillo Salsa with Cilantro
Sioux-Z-Wow's Saucy Nickname is
Sassy Black Bean Salsa
Serves 6-8
1 lb. Black Beans, soak 8 hrs. & drain
1 Can Chicken Broth (49 oz.)
1 C. Sioux Z Wow Marinade
1 lb. Frozen Corn, blanched & cooled
7 Tomatillos, diced (or 2 tomatoes)
1 ea. Red & Green Pepper, diced
1 bn. Cilantro, chopped (save 6-8 sprigs
for garnish)
Salt and Pepper to taste
To Make: Cook black beans in Sioux Z Wow and chicken broth over med. heat for 1½ hours or until tender, (add water if necessary). Let beans cool then drain. In a lg. mixing bowl, combine beans, corn, onion, tomatillo and peppers. Chill for several hours.
Serving Suggestions: Add chopped cilantro and garnish. Serve on a plate as a salad, in a bowl with tortilla chips for a scoop or over a baked potato. A mouth watering snack, side dish or a whole meal.
